Long celebrated for its sweeping coastline and as the gateway to both Huế and Hội An, the city has matured into a place where ambitious chefs are redefining Vietnamese gastronomy through global perspectives whilst remaining deeply connected to local identity. Among them is Chef La Thua An, whose restaurant, The Temptation, offers one of the city's most personal interpretations of contemporary French cuisine.

Rather than attempting to recreate France in central Vietnam, Chef An explores the relationship between two culinary cultures with remarkable sincerity. Years spent mastering classical French cuisine are evident throughout the menu, yet the flavours and traditions of his Chinese-Vietnamese upbringing remain equally present. The result is a tasting menu that feels less like fusion and more like a conversation between heritage, craftsmanship and lived experience.


The setting reflects that same philosophy. Hidden away from Da Nang's energetic beachfront, The Temptation occupies an elegant villa framed by sage-green columns and tropical greenery. Its understated façade resembles a refined private residence rather than a conventional fine dining restaurant, inviting guests into an experience that feels intimate from the outset.



Inside, floor-to-ceiling windows flood the dining room with natural light, softening the classic French-inspired interior of polished timber floors, emerald leather chairs and crystal chandeliers. The sixty-seat dining room strikes a balance between elegance and comfort, remaining sophisticated without ever becoming intimidating. Every detail encourages guests to settle in for an evening where conversation unfolds as naturally as the succession of courses.


That quiet confidence extends beyond the dining room and into Chef La Thua An’s culinary philosophy. Born in Hue, Vietnam, his earliest sensory foundations were shaped by his family's rich culinary roots before embarking on a life-altering journey to France at the age of six. Growing up, his dual identity was shaped between the French school system and hands-on experience in a Chinese family friend's restaurant, starting at the age of 13. Later on, his classical training at the prestigious Auguste Escoffier School of Culinary Arts refined his technical precision. Rather than viewing French techniques and his heritage as separate worlds, Chef An allows them to exist in an intuitive conversation. At The Temptation, French craftsmanship provides the structure, while his Vietnamese and Chinese roots quietly guide his creative decisions, creating a cuisine that feels deeply personal, sincere, and balanced.

The evening begins with the Trilogy of Mise en Bouche, three thoughtfully composed bites presented amongst smooth black pebbles beneath delicate white branches. A crisp tartlet of Mimolette cheese cream, Parma ham and confit onion delivers richness in a single bite. At the same time, a pebble-shaped smoked salmon rillette coated in bamboo charcoal mayonnaise adds a playful visual element. Completing the trio is a preserved lemon sphere filled with carrot and orange soda, releasing fragrant mint smoke as it is enjoyed. Together, the opening gently awakens the palate while introducing Chef An's thoughtful approach to presentation.

The first plated course is Soup, a vibrant bowl of green peas and asparagus, centred around a perfectly sautéed prawn, crisp angel-hair vegetables, seaweed, and a wholemeal tuile. Sweet peas, delicate asparagus and the natural sweetness of the prawn come together in a dish that is both refined and comforting, preparing the palate for the seafood courses ahead.

The Appetiser takes the form of a clear crab raviolo, a dish that perhaps defines Chef An's philosophy more than any other. Inspired by the oversized Italian raviolo, he replaces traditional pasta with a translucent wrapper made from Chinese rice flour, giving it the delicate chew of an Asian dumpling. Filled generously with sweet local crab meat and served in a silky seafood emulsion finished with shaved Parmesan, the dish reflects both his Chinese-Vietnamese heritage and his French training. It is a thoughtful piece of cooking that demonstrates cultural exchange through technique rather than novelty, allowing each tradition to retain its own identity whilst creating something entirely new.

The First Main Course is pan-seared Hokkaido scallop, cooked until delicately caramelised whilst retaining its buttery centre. Accompanied by pumpkin purée, green apple, grilled mushrooms, white asparagus and a vibrant citrus foam, the dish unfolds through measured layers of sweetness, acidity and umami. Every element supports rather than overshadows the scallop's exceptional quality, demonstrating the confidence that comes with restraint.

The Interlude arrives as a marigold sorbet accompanied by crisp garden vegetables, offering a welcome pause before the menu turns towards richer flavours. Light, floral and delicately acidic, it refreshes the palate without interrupting the evening's rhythm, demonstrating the thoughtful pacing that defines Chef An's tasting menu.

The Second Main Course showcases Australian grass-fed beef tenderloin and Chef An's command of classical French cookery. Served perfectly medium-rare alongside silky potato purée, caramelised shallots, roasted baby carrots and sautéed mushrooms, the dish is united by a glossy black pepper sauce that demonstrates why sauce-making remains one of French cuisine's defining arts. Confidently restrained plating allows the quality of the beef to remain the undisputed centrepiece.

The meal transitions into Cheese, a carefully selected trio of Brie de Meaux, Fourme d'Ambert and aged Mimolette, accompanied by artisan bread and truffle honey. Rather than overwhelming diners with variety, the course celebrates thoughtful curation and the timeless pleasure of exceptional cheese, providing a graceful bridge between the savoury and sweet courses.



For Dessert, Chef An presents The Pillow of Love, perhaps the menu's most poetic creation. Presented atop an illuminated cloud-like pedestal, a vibrant raspberry-red heart rests gently upon a marble-effect pillow, crowned with Sturia vintage caviar and delicate edible flowers. Diners are invited to slide the heart from its pillow before taking the first bite, a subtle gesture that reflects the dessert's romantic narrative. Inside, layers of dark chocolate, raspberry Inspiration ganache and raspberry gel are lifted by the unexpected salinity of the caviar, creating a balance far more nuanced than the presentation initially suggests. Accompanying the dessert is a raspberry liqueur chocolate bonbon, whose rich chocolate shell and liquid centre echo the fruit-forward flavours of the heart, offering one final indulgence before the meal draws to a close.

Finally, Mignardise arrives in the form of a jewellery box filled with handcrafted chocolates, fruit pâte de fruit and delicate mint-infused petit fours. Like the opening bites, the final course is measured and restrained, leaving diners with freshness rather than excess.

Many restaurants speak of blending cultures, yet relatively few achieve it without reducing either tradition to decorative references. What distinguishes The Temptation is that its identity grows naturally from Chef La Thua An's own story. French technique provides the framework, while his Chinese-Vietnamese heritage shapes the flavours, memories and instincts behind every plate. Neither seeks to dominate the other; instead, they exist in quiet harmony.
