Thai food has plenty of ways to make an impression before meat enters the conversation. The fragrance of herbs worked into a sausage, the heat of freshly pounded gaeng paste, and the competing textures of a well-assembled Miang Kham. These are the foundations of The Mindful Table, a collaboration between JW Marriott Khao Lak Resort & Spa and Chiang Mai's SUKJAI by Pata Obasan. At Ta-Krai, the resort's Thai restaurant, familiar dishes become a study in how much of their character comes from seasoning, technique, and the care taken with each ingredient.

Created for the Vegetarian Festival from 10 to 18 October 2026, the collaboration brings SUKJAI's plant-based philosophy to Khao Lak through a menu with a strong Northern Thai influence. The launch of The Mindful Menu on 6 October introduced that approach, moving from small bites to a shared Thai samrub and a dessert made by the resort's own team. Its interest lay in the details: three varieties of mushroom in Sai Ua, seaweed in a plant-based interpretation of shrimp, and Organic Hom Nin Rice grown on SUKJAI's farm.

Behind the restaurant is Chamnian Iamchareon, affectionately known as Pata, Thai for "Auntie Ta". Her recipe collection developed from a desire to retain the Thai flavours she grew up with after becoming vegetarian. Paniti "Nong" Chantayasakorn, SUKJAI's founder and head chef, brings those recipes into a contemporary restaurant setting. Listed in the MICHELIN Guide Thailand, SUKJAI grows its own vegetables and makes plant-based proteins in-house, including a jackfruit preparation used in place of pork. Its cooking is rooted in Buddhist philosophy, with attention to the origins of ingredients and what happens to them in the kitchen.

That background gives The Mindful Table a more substantial premise than a seasonal change of ingredients. Recreating a familiar dish requires an understanding of why it is recognisable in the first place. A sausage needs structure, but Sai Ua also depends on the relationship between herbs and spice. A grilled skewer needs a satisfying bite, while its sauce contributes another layer of richness. SUKJAI's approach makes those supporting elements central to the conversation, treating plant-based cooking as a craft with its own demands.

Before the menu was revealed, Pata led a cooking class featuring Plant-Based Shrimp with Chilli and Salt and Khao Yum with Plant-Based Boodoo. The shrimp preparation began with mushrooms wrapped in seaweed, giving a clear view of the ingredients behind the seafood-inspired dish. Khao Yum introduced a different approach, bringing rice together with an array of finely sliced herbs and shredded vegetables, accompanied by a plant-based interpretation of boodoo dressing. The two preparations offered a practical introduction to SUKJAI's cooking, from crafting a seafood alternative to assembling the many elements of a Thai rice salad.

The launch dinner began with Kratong Thong and Miang Kham, two small preparations that introduced this thinking without requiring a lengthy explanation. The former paired a crisp, golden pastry shell with a savoury plant-based crab filling, retaining the contrast between the delicate casing and the substantial centre. Miang Kham brought the meal back to the Thai herb bite, a format whose appeal already rests on bringing several ingredients together in a single mouthful. Together, they created a menu that respected familiar forms while leaving room for the ingredients to change.

Northern Thai Sai Ua followed, made with three varieties of mushroom and Northern Thai herbs. Its aromatic character comes from lemongrass, makrut lime and galangal, a combination that gives the sausage a clear regional identity. Sliced sausage was served alongside Plant-Based Moo Satay, its skewers accompanied by peanut sauce and a separate cucumber relish. The pairing worked: one preparation built around herbal complexity, the other around grilling and the richness of its accompaniment.

The Moo Satay also illustrates why keeping a familiar dish's name can be helpful. It provides a reference for the preparation style while allowing SUKJAI's own plant-based protein to take the place of pork. Grilled skewers served with a rich, chunky peanut sauce and vinegary ajaad dip retain the dish's essential arrangement. Set beside the Sai Ua, the satay broadened the opening plates beyond a single regional tradition, introducing another well-known Thai favourite through a different treatment of the main ingredient.

Plant-Based Shrimp with Chilli and Salt took the menu in another direction. Made from mushroom and seaweed, the preparation was cooked with garlic, chilli and salt, coating the curled pieces in seasoning. Here, the main ingredient itself became part of the kitchen's work, rather than simply a vegetable standing in for seafood. Mushroom and seaweed provided the foundation for an interpretation that carried the familiar name and seasoning of the original dish.

The next part of the dinner moved into a samrub, bringing several dishes together with rice. Young Coconut Tom Yum offered a clear soup with Thai herbs, while Northern Spiced Mushroom Laab replaced minced meat with mushrooms. Served with vegetables on the side, the Laab carried the menu's stated combination of herbs and toasted rice. The arrangement let the meal settle into a recognisable Thai rhythm, with soup, a seasoned mushroom dish, and vegetables adding different elements around the rice.

Plant-Based Catfish Choo Chee completed the savoury selection, prepared with freshly pounded red gaeng paste. Its texture and flavour closely resembled those of real fish, making it a particularly convincing expression of SUKJAI's plant-based craft. The browned pieces were served on a banana leaf, topped with strips of red chilli and fine green garnish. Alongside them, Organic Hom Nin Rice from SUKJAI's farm gave the samrub a direct connection to the restaurant's agricultural work. Its deep colour also made a visual counterpoint to the clear soup and the brighter garnishes across the table.

The resort's dessert brought the dinner closer to Phang Nga. Listed as Coconut and Phang Nga 70 Per Cent Chocolate, the vegan finale combined coconut crumble, coconut gel and mango. It extended the plant-based theme into a sweet course while introducing a local ingredient story. The chocolate connection sits within JW Marriott Khao Lak's wider collaboration with Duc de Praslin Chocolaterie Boutique & Atelier, which brings Belgian chocolate-making craftsmanship together with cacao grown in the province.

The resort's 27-acre JW Garden provides another connection between growing and cooking. The launch programme also included a garden tour, while ingredients picked from the garden were used in the cooking class. That context matters to a collaboration built around mindful eating: it makes room to consider the ingredient before it becomes a finished dish. At Ta-Krai, the dinner then brought that idea into focus through preparations whose identities remained distinctly Thai.

For the festival itself, the announced Ta-Krai selection includes Plant-Based Sai Ua and Moo Satay, Khao Soi with a creamy coconut broth and crisp noodles, Grilled Plant-Based Beef with Spicy Jaew Sauce, and Northern Spiced Mushroom Laab. Available from 10 to 18 October 2026, The Mindful Table gives JW Marriott Khao Lak a timely way to explore Thai culinary heritage through SUKJAI's cooking. Its most persuasive idea is also its most practical: when the kitchen understands the dish well enough, familiarity can survive a change of ingredients.
